A Personal Note

How is everyone this week?  I have been working long hours trying to really promote and improve DWW.  I have been studying all about marketing, search engines etc.  It has been fun, but I often get overwhelmed, as I think of so many great ideas I would love to implement.  One step at a time I guess!  This new FREE newsletter I started last week has grown to over 40 subscribers!

So here's a good laugh for you.  This one definitely makes my top most embarrassing moments list.  It was Christian's (my 3 year-old) pre-school teacher's birthday last Monday.  I had bought her some nice body lotion as a gift.  I gave it to Christian to carry in and present to Miss Debbie.  He proudly hands it to her and before she even has it open he blurts out - "It's lotion! - The kind you put on your (insert name of boys private part) when it hurts."  Oh my gosh, I about died!  She handled it quite well though.  I guess he must have gotten that from watching me put diaper cream on the baby?  That one definitely has to go in the baby book. 

It was a big weekend for us.  It was Dane's first birthday (my youngest little guy) on Saturday.  Then yesterday he was baptized.  It is nice to wind down now.  I hope everyone has a splendid week!

Taco Pizza

Makes 8 servings

1 pound ground beef
1 envelope taco seasoning mix
1 cup water
2 prebaked pizza shells (12 inches)
1 can 16 oz refried beans
3/4 cup salsa
2 cups coarsely crushed tortilla chips
2 cups shreadded cheddar cheese
2 medium tomatoes chopped (optional)
1 cup shreadded lettuce (optional)

1. In a saucepan, cook beef over medium heat until no longer pink; drain.

2. Stir in taco seasoning and water. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes; set aside.

3. Place crusts on ungreased pizza pans or baking sheets.

4. Combine beans and salsa; spread over crusts. Top with beef mixture, chips and cheese.

5. Bake at 350 deg. for 13-16 minutes or until cheese is melted. Sprinkle with tomatoes and lettuce if desired.

CHOLESTEROL TRIMMING TIPS

~ Opt for a meatless meal at least twice each week. Since all meats and meat products contain cholesterol, a meatless meal is an easy way to keep your dietary cholesterol in check.

~ Be seafood savvy. Shellfish vary in their cholesterol content. Shrimp for example are very high in cholesterol, while scallops and mussels are quite low. All shellfish are low in total fat and saturated fat, which means that you can still eat them as part of a low-fat, low-cholesterol diet. Just make sure that you stay within you daily cholesterol limits.

~ Limit eggs to four per week. The 210 milligrams of cholesterol in one egg yoke supplies more than two-thirds the recommended daily limit. The good news is that egg whites have no cholesterol, and in many chases can be used instead of whole eggs. For example, try an omelet made with one whole egg and two egg whites or use 1/4 cup fat-free cholesterol-free egg product.

~ Choose fat-free or low-fat dairy products. Dairy products can be cholesterol culprits. Choose a cup of fat-free (skim) milk instead of whole milk and save 30 milligrams of cholesterol. Replace a 1/2 cup of sour cream with a 1/2 cup of low-fat yogurt and cut your dietary cholesterol by 70 milligrams.
