A Personal Note

 

Hello! I am writing my note a bit early this week (Sat. Night) as we will be off camping on Monday when this gets sent out. The weather looks great this go around and we are much more relaxed, so hopefully we will have a great time! I know the kids are really looking forward to it! And me... well I guess tent camping can be fun once per year. LOL It brings me the most joy knowing we are making great memories with the boys. I don't remember getting to go to an amusement part while we were camping when I was a kid though... my things have changed.


We have been super busy preserving food. We ended up with 36 bags or frozen sweet corn, several small bags of frozen green beans (I'm the only one who really likes them), a few loaves of various zucchini bread recipes (with much more already grated and in the freezer ready for bread), dehydrated peppers, frozen pepper sauce, and lots of pickles. I can't wait until next year when hopefully we'll have some decent berries! We're getting there in our gardening skills.... I'm sure each year we'll just get better. It has been a lot of fun and the boys have gotten to help quite a bit as well as we preserve all these goodies. The cantaloupe will be coming soon and we have picked a couple watermelon, but neither of them have been completely red all the way through yet...(we ate the part that was red anyway.)

 

I can't believe it is August already this week. I guess I better get organized for Ryan's birthday coming up on the 23rd. By then he will already be back in school! He'll be 7 this year - I can't believe it! I have a birthday coming up in August as well... but we don't need to talk about that. LOL

 

Well, I better finish up packing and get ready to head out in the morning after church.

Recipe of the Week

Pork Loin Chop Recipe
Makes 4 servings
 
      1 pound boneless center-cut pork loin, trimmed of excess fat
      3 tablespoons minced fresh basil
      2 large tomatoes, sliced about 1/4 inch thick

1. Cut pork loin into 4 equal cutlets no more than 1/2 inch thick.

2. Grill or broil pork. When first side is done, turn pork over and place basil and 1 tomato slice on top.

3. Cover grill and continue cooking until pork is done. (If you cannot cover the grill, cutlets can be placed in a microwave after grilling to cook the tomatoes slightly.)

4. Garnish each plate with remaining tomato slices.

Serve with peas

Eating Healthy Can Taste Good

 

One of the biggest reasons people don’t eat healthy foods is because they fear that it lacks taste. It's quite the opposite. If your health food your eating doesn’t taste good, you’re eating the wrong health food! We need to eliminate the notion that just everything good for you tastes bland, boring, or completely gross. There are many ideas for eating healthy without sacrificing on taste Here are just a few of them.

Try new alternatives
The health food market has undergone a transformation in recent years. Because eating healthy is more popular there are a lot of new products and healthy alternatives are now available. Next time you’re at a health food store (and if you don’t go, you definitely should check one out), look around at all the different options. You'll be pleasantly surprised to find they offer more options than ever before. There are now healthier versions of previously unhealthy foods. Why not try them; you might be pleasantly surprised with the taste.

Make your own food
It’s become so easy to buy food that’s frozen, boxed, or even already cooked for us. The problem is that convenient food isn’t always healthy food. And the ones that are marketed as health food usually don’t taste that great. This can result in you tossing it in the trash after a few bites and gravitating to something less healthy. If you make your own food you can control the flavor. To save on time, cook several meals on your day off and pop them in the freezer. That way you have the convenience of frozen food without the blandness and questionable texture.

Spice it up
Think food that’s good for you is synonymous with bland and boring? Not true. A great way to add taste without adding a lot of fat or calories is to kick it up a notch with spices. Salt is not the only seasoning you can add to your food. Try experimenting with different flavors until you find the ones you like the best. A simple breast of chicken can take on several different tastes just by seasoning it with lemon pepper, seasoned salt, or Caribbean spices

Get fruity
If you’re craving sweets, fruit is a great options. It can satisfy your sweet tooth without binging on candy and chocolate. Instead of your normal afternoon snack straight from the vending machine, opt for an apple or another fruit you can easily toss in your purse. Bored with the same old fruit? Try dipping it in yogurt or a yogurt and granola mixture for added taste without adding tons of calories. At dinner, you can add fruit as a dessert, side dish, or even put some into the main course. Fruit gives you lots of vitamins and minerals and it satisfies your need for sweets. If you own a juicer another great idea is to juice various vegetables and then add fruit to flavor. You’ll be getting the added benefit of vegetables with the taste of fruit juice. Smoothie are a great way to curb sugar cravings. Toss your favorite fruits such as strawberries and bananas into a blender with plain yogurt and some ice. Experiment until you find flavors that satisfy your cravings for sweets.

Don’t sabotage your healthy eating habits by believing that diet food tastes bad. You can get food that’s good for you and tastes great, you just might have to look a little harder to find it. But once you find it, you'll be glad you did. Adding good tasting nutritional food will nourish your body and give you more energy. It will also help you lose weight and maintain a healthy lifestyle.
