A Personal Note

Happy Monday!  I hope you are recovering from the Super Bowl festivities.  I am not really into football, but of course we had to watch since we live in WA.  We hung out at my parents house and ate lots of yummy treats.  Tonight I get a break from the kiddo's (and husband) to attend a Dallas Brass Concert with my parents and grandparents.  My brother is in the high-school band and they are playing two pieces with Dallas Brass as part of the concert.  It should be enjoyable.

Recipe of the Week

Pizza Pasta Casserole
Makes 8 servings

 

1 pound ground beef

1/2 onion chopped

1 jar spaghetti sauce

1/2 package 16 oz. spiral pasta cooked and drained

2 cups shredded mozzarella cheese

4 ounces sliced pepperoni

 

1. In a large skillet, cook beef and onion until meat is no longer pink; drain.  Stir in spaghetti sauce and pasta.

 

2. Transfer to a greased 13x9x2" baking dish. Sprinkle with cheese. Arrange pepperoni over the top.

 

3. Bake uncovered at 350 degrees for 25-30 minutes.
