Just a quick note.  I am getting this typed up and then my computer is getting packed up.  We are on our way to IL from WA.  Our movers are coming tomorrow!  Today is a very busy day as we finish packing and cleaning.  I will be taking a couple weeks off from this publication until we get settled in.  However, if you want something to read there is plenty of info. for you in the newsletter archives.  The menu planning service will continue to run as normal.  "See" you in a couple weeks!  Until then take care!

Recipe of the Week

Exerted from this week's family friendly menu plan and convenient grocery shopping list. 

Have you tried our sample menu

Parmesan Crusted Chicken

Makes 6 servings

 

    1 clove garlic minced                                          

    1/2 cup butter melted                                          

    1 cup dried bread crumbs                                        

    1/3 cup grated parmesan cheese                                 

    2 tablespoons fresh parsley chopped                            

    1 teaspoon salt                                                

    1/8 teaspoon ground black pepper                               

    1 chicken cut into pieces (You can buy it this way, or use chicken pieces of your choice - drumsticks boneless skinless etc.)

 

1.  Preheat oven to 350 degrees.

 

2.  In a shallow glass dish or bowl, combine the crushed garlic with the melted butter.

 

3.  In another small bowl mix together the bread crumbs, cheese, parsley, salt and pepper.

 

4.  Dip chicken pieces into garlic butter, then into crumb mixture to coat.

 

5.  Place coated chicken pieces into a lightly greased 9x13 inch baking dish. Drizzle with remaining garlic butter and bake uncovered in the preheated oven for 1 to 1 1/4 hours, or until chicken is cooked through and juices run clear.
