A Personal Note

 

Hi there!  I hope you had a great weekend!  We had a houseful yesterday.  This Thursday Christian, our middle child, turns four and it is also our 10 year anniversary. To celebrate we invited our entire church over for a cook out yesterday.  (For those of you who are new, my husband is the pastor of the church.)  We had about 80 people show up.  The weather was beautiful and everyone had a great time. 

 

We have a new furry friend.  Saturday night a kitty showed up at our back sliding glass door.  He is a tiny skinny little thing so of course we fed it....  Then Matt made it a little bed.  Yesterday he was still around through the entire party.  I thought the crowd would scare him away but apparently not.  He had lots of snacks throughout the day and slept in his bed Matt made him last night.  He's really friendly, appears healthy and is good with the kids.  Matt named him Snickers.  So I guess we're off today to buy some cat food.  I don't think he's leaving anytime soon.  Hopefully no one is missing him. 

 

We don't have much on our plate for this week besides our big day on Thursday.  Should be a nice relaxing week.  I hope your week is enjoyable as well.

Recipe of the Week

Exerted from this week's family friendly menu plan and convenient grocery shopping list.

Lemon Chicken

Makes 6 servings

PREP:  Start the NIGHT BEFORE

Thaw Lemonade

 

    1 12-ounce can frozen lemonade concentrate thawed              

    2 tablespoons brown sugar                                      

    2 tablespoons soy sauce                                         

    1 teaspoon garlic powder                                       

    1 teaspoon chopped mint leaves fresh or dried                  

    6 boneless skinless chicken breast halves                      

 

1. In a large resealable bag, combine the first five ingredients.  Remove half of the contents to a small bowl; cover and refrigerate for basting later. 

 

2. Add chicken to the bag, seal and turn to coat.  Refrigerate overnight, turning occasionally if you get a chance.

 

3. Drain and discard marinade from chicken.  Grill, covered, over medium heat for 15 minutes, turning occasionally.  Baste with reserved marinade.  Grill 5-10 minutes longer or until juices run clear, basting and turning several times.
