Shell and Devein Shrimp A Personal Note
For those of you who have been following my life updates, Matt
(my hubby) all of the sudden this week has three new job
leads! For those of you who are new - he is a Lutheran
pastor, and he resigned from his last position almost a year
ago and hasn't accepted a new position yet. All leads
sound really good so hopefully one of them will pan out.
We're ready to jump back into ministry! Although, that
will mean our 7th move in less than 10 years! Yuck!
Moving is not my favorite thing in the world! (I doubt many
people really enjoy it.) Hopefully the next place we
land we will stay for several years. Other than that not
too much is happening around here. Just the basic day to
day life tasks. (I think I folded 8 or 9 loads of
laundry today - Fun Fun!) I hope you are having
wonderful week!

Easy Shrimp Scampi
Makes 4 servings
~ Health Conscious Recipe ~
8 ounces angel hair pasta
1 3/4 cups low sodium chicken broth
2 cloves garlic minced
1/4 teaspoon salt free lemon pepper seasoning
1/4 cup chopped green onions divided
1/4 cup minced fresh parsley divided
1 pound shrimp peeled and de-veined
1. Cook pasta according to package directions.
2. Meanwhile, in a large saucepan, combine the broth, garlic,
lemonpepper and 3 T. each of green onions and parsley. Bring to a boil. Add
shrimp; cook for 3-5 minutes or until shrimp turn pink.
3. Drain pasta and place in a serving bowl. Top with shrimp
mixture and remaining onions and parsley.

How To Shell And Devein Shrimp
To peel or shell shrimp, using your fingers, open shell
lengthwise down the belly of the shrimp. Starting at the head end, pull the
shell away from the body. The tail can either be left intact or removed by
gently pulling it off. If the shell is hard to get off, you may enlist the
help of your kitchen shears.
To devein, use a sharp knife to make a shallow cut down the back of the shrimp.
Use the tip of the knife to pull out the dark vein running down the back.
Thoroughly rinse under cold running water.
Deveining is optional. The black vein that usually runs along the outer curve is
not harmful and has no flavor, but may have a gritty texture. Some people find
it unappetizing and therefore it is the norm to remove it.
