A Personal Note
Happy Halloween! We had a great time last night – our church had
Trunk ‘O” Treat night. Members parked in the parking lot and decorated the
trunks of their cars. Then the kids went Trunk ‘O’ Treating. Lots of fun and
somehow we ended up with beautiful weather too! Now we’re left with huge bags
full of candy and ecstatic little boys. Dane, our littlest one did not want to
take his costume off. Daddy finally convinced him it would be a good idea
thankfully. The kids want to go trick-or-treating in town on Halloween. They
really do not need any more candy…but we’ll see what the weather is like before
we make our final decision.

Easy Lasagna
Makes
9 servings
You can prepare this the night before and bake the next day if desired.
2 tablespoons butter
1 1/2 pounds ground beef
1 cup chopped onions
4 8-ounce cans tomato sauce
1 teaspoon salt
6 ounces shredded mozzarella cheese
1/4 teaspoon pepper
1 teaspoon oregano
1 teaspoon garlic salt
2 cups ricotta cheese (or small curd cottage cheese)
1 8-ounce package lasagna noodles
1/2 cup grated parmesan cheese
1. Sauté onions in butter until tender. Add ground beef and brown. Drain.
2. Add tomato sauce, salt, pepper, oregano, and garlic salt to hamburger
mixture. Simmer for 20-30 minutes.
3. While sauce is simmering, cook lasagna noodles according to package
directions. Drain.
4. In a 9x13 baking dish layer: 1/3 sauce, 1/2 noodles, 1/2 ricotta cheese, 1/2
parmesan cheese, 1/2 mozzarella, 1/3 sauce, 1/2 noodles, 1/2 ricotta, 1/2
parmesan, 1/3 sauce and top with 1/2 mozzarella.
5. Bake at 350 degrees for 25 minutes or until cheese is melted and bubbling. If
dish has been prepared ahead of time and is refrigerated - bake for an
additional 25-30 minutes.
Serve with Dinner Salad and Garlic Bread
