Life Updates

Wow, it has been awhile hasn’t it… It has been a struggle lately to balance life and work.  But that is why I work at home – so I can be there for my family.  That being said…  this little one is being a normal two-year old and demanding quite a bit of my attention (as any two year old should)!

Because I love her so much, but also because I love my job and it is getting kind of hard to balance the two… I have decided to hire a friend to watch her for two mornings a week – just 8 hours a week – that will hopefully bring me some balance and peace.  That leaves me with 8 solid hours to work (plus evenings and nap time a few days a week) to get some work done!  Balancing working at home is never an easy thing!

So now that I have a bit of time to think… tell me what you want to hear about!

Your Questions Answered – Part 3

Alright, it has been awhile since I have answered your questions from the post I asked for your questions!  But I did want to finish answering them! 

  • flutemom Says: I’m curious about your upbringing, in relation to food and menu planning and cooking, etc. did you learn these things growing up, or is it something you had to learn when you were older? what inspired you to blog about your journey and to share your experiences with others?

    Answer:  I did learn some things while growing up – we did try to have meal times together whenever possible.  I never really thought about what all goes into the process until I was married.  Meal planning became a necessity after we had a 4 year old, 2 year old, and newborn.  There was just no way I could visit the grocery store every other day to pick up items – I had to have a plan!  As far as what inspired me to blog my experiences…  I started out with my Dine Without Whine website and later on added the blog.  The business just grew from there.  Dine Without Whine started because I realized how much time it was taking me to develop my weekly menu plan and grocery shopping list, and I figured I may as well share my work with others to save them time! 

  • Nikki Says:  Do you use the menus each week yourself — or are there lots of times it looks great on paper — but in reality everyone is eating tuna sandwiches potato chips and drinking a cup of iced tea.

    Answer:  When I first started Dine Without Whine I posted my actual personal menu for the week.  Now that Menu Planning Central is in the picture and we have 4 menu options each week – obviously I can’t cook all of those every week, but I do still personally meal plan! 

  • Melanie Says:  What is your biggest challenge raising 4 children and do you see your family expanding anymore?
  • Answer:  Oh goodness…  depends what day you ask me!  Some days I feel like I have it all together and other days I feel like I am completely at a loss!  Probably the biggest challenge would be staying organized with who needs to be where or have what when.  As soon as I get sports schedules or school notes I have to put them on the calendar and then hope for the best that I will check it!  Really though, I feel like we are in a pretty good routine at this point. 

    As far as our family expanding more…  We have talked about it.  We are not completely closed to the idea, but also aren’t actively trying at the moment to get pregnant.  Four feels right at the moment, but you just never know!  (We’ll see if the grandparents catch that one!  he he)  At this point if someone asks us we generally say we are most likely done…  It is a really hard decision!   

  • Sheri Says:   I am getting tired of all the same old same ole snack options for my kids. What kinds of things would you recommend?

    Answer:  Hmmm, well what are you tired of?  My kids like yogurt, fruit, dried fruit, nuts, popcorn, pretzels, all kinds of processed goodies that I try to not let them have, smoothies, muffins, carrots/celery with dip, etc.  I actually have an ebook entitled “A Year of Snacks”.  I don’t sell it, but use it as a bonus for certain products and also sometimes give it away on our Facebook fan page, so join over there and watch for your chance!   

  • temple Says: first, your kiddos are beautiful. Second, my question is how do u prepare meals on a very tight budget for 2 picky kids and an even pickier husband?

    Answer:  First off, THANK YOU!  Second, have a family pow-wow.  Sit down and have everyone shout out things they like to eat.  Make a chart with breakfast, lunch, dinner & snacks.  Then decide what you can afford weekly, and what are special treats.  For the special treats watch for sales & coupons for those items.  Also, maybe pick up one or two things each week at regular price.  This chart really helps when you are stuck and have no ideas what to cook too!  Then if you try a new recipe each week, you can either trash it or add it to your list after it has been tried. 

  • Michele Johnson Says: What is a favorite side dish for Thanksgiving that is nutritious too?

    Answer:  Oh my goodness, was it really before Thanksgiving when you guys asked these questions?!?  So sorry!  Well… we really like this…http://www.themenumom.com/sugar-free-pumpkin-dessert   Um… not necessarily nutritious, but better than some Thanksgiving desserts!  Other than that, I really like to have a veggie & fruit tray available for everyone to snack on!

    Checking In – Weekend Re-Cap

    Hi friends,

    I hope you all had a great weekend. Ours was perfect – couldn’t get much better!   Friday night, we went to town – to Kohl’s and the mall.  I had a return to do and was in search of a new comforter for our bedroom.  First we stopped at the food court though, and they had a big fun Friday Night Kids thing going on.  There was a magician who visited our table and entertained while we ate, then free balloon animals, face-painting, cheerleading demonstrations, and carousel rides!  The kids had a GRAND time!  It wasn’t really in the plan and sucked up an hour of our shopping time… (you would think the mall would start staying open later this time of year) BUT it was so worth it to watch the kids enjoy themselves!  In the end we did find a comforter (and new pillows) – my we had our arms full as we were trekking through the now closed mall to our car.  And in the parking lot we were greeted to a winter wonderland (where just 3 short hours earlier it was not snowing at all!)  It was BEAUTIFUL!  However, our normal hour long car ride home did take substantially longer, and we counted 6 cars in the ditch…  but we made it home safely!

    We woke up on Saturday to a good 4” of snow on the ground which made the day extra blissful and relaxing.  We were scheduled to attend a basketball round robin in the morning, but of course after I drug myself out of bed the call came in that the games were cancelled.  (If only they could have called 20 min. earlier!) But at any rate, this afforded us the luxury (seriously it is a luxury) of staying home the entire day!  That RARELY happens!  It was nice – we got some organizing done, the boys played in the snow, we took long afternoon naps (well I did anyway…) and we put up the Christmas Tree.

    Sunday we of course had church, but after that it was another relaxing afternoon.  I worked on some vacation plans, the kids played and we had coconut waffles for dinner – yummy!

    Today it is COLD… I climbed right back into bed with my laptop after the boys went off to school.  In the mail today, arrived Mexican Jumping Beans from www.mypetbeans.com Brings back so many childhood memories!  Each of the boys have some now, as well as a few sets for gift exchanges coming up in the coming days.  I should have got some for myself!

    Well, gotta check homework and then we are off to a basketball game and then afterwards I have to work in the concession stand for the following game!  Busy as usual!

  • Ashley Says: How is your family doing?
    ANSWER:  We’re doing well!  No complaints.  The kids are growing too fast though!  We’re sprinting into the middle school years too soon! 
  • Jennifer Says: Will there ever be a menu for gluten / wheat free families?
    ANSWER:  Maybe!?!  It’s a time issue for one.  But second, I really need someone who is an expert in this area to help write those as I just don’t feel like I am experienced enough in that area.  If anyone knows someone who would be good – let me know!
  • Kirstie Says:  I need some lunch ideas for hubby and son, both need to be unrefrigerated and no re-warming.  And they don’t want any more PB&J!
    ANSWER:  Unrefrigerated, but you can use ice packs right?  A couple of my favorite inspirations for lunch boxes are here:

    Yes, they get a bit fancy, but you can still get some fun creative lunch ideas!
     
  • Melissa Says: I’m wondering if you have a great (or even just a good!) recipe for candied nuts. I tried heating sugar and water with some honey, but it didn’t result in the candied nuts I was hoping for. Have you got any recipes for this you could share?
    ANSWER:  To be honest, I have never made candied nuts!  I like them though and the smell of them at fairs or whatever… pure heaven!  I will ask this question on our Facebook page to see if we can get some recipes for you!
     
  • Kristine Says: How do you deal with picky eaters?
    ANSWER:  Oh yes… the good ol’ picky eater question.  :)   I try to find a happy medium.  I try to not have every meal of the day be things I know my picky guy won’t eat…  But at the same time I do not not cook something simply because Mr. Picky won’t eat it – if there are many others in our family who will!  My rule is you have to try at least one bite – even if you “know” you will not like it.  (except they are all allowed to have 3-5 foods that they are free to not have ever – such as potatoes for Mr. Picky.  We don’t make him take one bite of those – as we know he will gag EVERY time…)  As he has gotten older, he has learned to pick around things he doesn’t like and eat the things he does.  I won’t get up to make him another meal, but he has the option to make something on his own (he is 10).  Generally it is something easy – or just grabbing a piece of fruit or something like that.  If I can do something to help him beforehand I will.  For example, he doesn’t like tomato sauce, so if we are having spaghetti, I will leave plain noodles for him – that type of thing. 
  • Christi Says: What is the one small appliance that you can not live without?
    ANSWER:  Hands down my Vita-Mix Blender. Click here to read why.  My slow cooker is very close behind though!

    Questions Answered – Part 1

    We ended up with some great questions in the comments here.  You can keep posting your questions if you didn’t get yours in yet!  I won’t be able to answer all 33 questions in this post – well I could… but then you would be here all day reading!  But I’ll start with a few!

  • Emily Says:
    What is your favorite thing to cook?
    ANSWER:  I really like trying new recipes that take under an hour and look pretty “no-fail”.  I really don’t get into anything super gourmet – just traditional home-style, family friendly, type stuff.  Anything that I know my family will enjoy makes me happy.  Absolute favorites are probably stir-fry and casseroles.  Oh, and breakfast foods are pretty fun too!
  • Melissa Says:
    What is a great main dish for Thanksgiving besides turkey?
    ANSWER:  I am under the mind-set that Thanksgiving is about being with family/friends – it’s about the people and the memories.  Food is an additional bonus!  If you aren’t into turkey, don’t have turkey!  (although if it is cooking it that is scaring you… don’t be scared – it really isn’t too hard!)  So how about lasagna, or prime-rib or just a bunch of yummy side dishes (green bean casserole, corn casserole, mashed potatoes, salads etc.)  What does everyone else think?  Do you have something on the less-traditional side for Thanksgiving? 
  • Amy Ulibarri Says:  What do you enjoy most about your website/blog?
    ANSWER:  Oh so much Amy – I wouldn’t do it (not worth the time and energy) if I didn’t LOVE it!  I love meeting and helping people.  I love that it gives me a way to “socialize” with other adults.  But most of all, I love that it allows me to not have to work outside of the home.  I know that is not possible for many moms who would like it to be, and so I do not take that for-granted – at all!  It is a true blessing!
  • Jenna Says: What is your favorite meal OR your favorite country of food inspiration?
    ANSWER:  We eat a lot of Italian and a lot of Mexican.  I adore a big Taco Salad (just in a bowl – no shell or chips) with lettuce, taco meat, refried beans, corn, cheese, sour  cream, tomatoes, & green onion, and a bit or ranch.  (Some people in our house add olives to theirs – but I’m not one of them!) 
  • Lori Gearheart Says: How long have you been doing this!?
    ANSWER:  Dine Without Whine was our first site, and it started in March 2005. 
  • Caroline Benton Says:  What are your biggest cooking/planning
    challenges?? How did you get to where you are with
    organization/planning etc.?
    ANSWER:  My biggest challenge at this point in life is the time constraints and chaos that ensues at our house from 4-8 p.m.  Between sports, evening meetings, homework, baths, (and of course eating) etc.  It generally makes for an often stressful time.  My biggest thing is to make sure to have a game plan when it comes to dinner – that is why menu planning is so helpful!  If I know what I am making and I know that I have all the ingredients on hand, things go sooo much smoother!  I don’t dread heading into the kitchen.  On the days when a plan isn’t in place, I am much more stressed, and we tend to either eat a make-shirt meal (frozen pizza, soup etc.) or go out…neither of which is ideal.  How did I get where I am at?  Out of necessity.  No one wants to be around a crabby stressed out mama!

I’d like to get some blogging in… because I like doing it!  So here’s what I’d like to do!  I’d like to answer any questions you might have – about my family, my business, a cooking question, about  myself –you name it.. well, I’m sure there are certain things I might not answer… but anything within reason!  So ask away in the comment area and I will answer your questions in the next blog post.  Now is your chance to maybe get an answer about something you have been wondering!  (and please do…  I’d feel kind of lonely with no questions asked!)

    I haven’t kept up on here as much as I would like.  The minutes roll into hours and the hours into days it seems.  The kids keep me busy – as it should be!  I feel beyond blessed to be able to work at home, and be with my kids – the best of both worlds; that not many have the opportunity to enjoy.

    Two years ago, our kids wore shorts until Mid Oct.  Last year by the end of Aug. we were in jeans and sweatshirts.  We seem to be on the every other year trend – because look at this forecast for this week… (East Central Illinois)
