A Personal Note

Just a quick note this week.  My parents and brother will be arriving from WA this evening so I am trying to get the laundry done and the house clean so we can have fun when they get here!  I am sure they will be ready for some R&R after driving 2000 miles in 3 days!  It took us a week to do that!  The kids are so excited to see them! 

 

I hope all the Dads had a great Father's Day!  We had a nice day.  We of course had church, and then Matt and Dane took a nap and then we went out of town to do a bit of shopping and had a nice dinner.  We took it pretty easy the entire weekend as it was really hot out and we were worn out from Vacation Bible School during the week.

Recipe of the Week

Exerted from this week's family friendly menu plan and convenient grocery shopping list. 

 

Apple Turnover Recipe

Makes 4 servings

 

    1 1/2 cups (2 medium) thinly sliced, peeled apples             

    1/4 cup finely packed brown sugar                              

    1 tablespoon water                                             

    1 teaspoon lemon juice                                         

    1 tablespoon all-purpose flour                                 

    1 tablespoon sugar                                             

    1/4 teaspoon salt                                              

    1/2 teaspoon vanilla extract                                   

    1 tablespoon margarine or butter                               

    1 refrigerated pie shell (from 15-ounce package)               

    1 tablespoon water                                             

    1 egg                                                           

 

1. In medium saucepan, combine apples, brown sugar, 1 tablespoon water and lemon juice. Cook over medium heat until bubbly, stirring occasionally. Reduce heat to low; cover and cook 6 to 8 minutes or until apples are tender, stirring occasionally.

 

2. In small bowl, combine flour, sugar and salt; stir into apple mixture. Cook until mixture thickens, stirring constantly. Remove from heat; stir in vanilla and margarine. Cool 15 to 20 minutes.

 

3. Meanwhile, heat oven to 375°F. Let pie crust pouch stand at room temperature for 15 to 20 minutes.

 

4. Remove pie crust from pouch. Unfold crust; place on ungreased cookie sheet. Press out fold lines.

 

5. Spoon fruit mixture evenly on half of crust to within 1/2 inch of edge. In small bowl, beat 1 tablespoon water and egg; brush over edges of crust. Fold remaining side of crust over fruit, turnover fashion; press edges firmly to seal.* Flute edge; cut small slits in top crust. Brush top with egg mixture.

 

6. Bake at 375°F. for 25 to 35 minutes or until crust is golden brown. Serve warm or cool.

Healthy Breakfast Ideas for Kids

Most of us already know breakfast is the most important meal of the day… This is especially true when it comes to kids. We need to ensure their little bodies receive nourishing foods to help them grow and thrive.

Here are some healthy breakfast ideas the whole family will enjoy.

Smoothies - Smoothies are certainly a great way to get a good dose of fruit. Chop up some fresh fruit, throw it in the blender and you have a healthy and delicious breakfast. For a heartier breakfast smoothie add some yogurt or a little high-fiber cereal.

Breakfast Muffins - For breakfast try a savory or fruit muffin. For a healthier muffin use whole wheat flour and instead of sugar mash a ripe banana or a little honey into the mixture. Unless you’re an early riser you probably won’t have enough time to make muffins in the morning. Simply make them ahead and either freeze or keep in an air-tight container for a few days.

Wholesome Eggs - Eggs are very versatile and most kids enjoy them. Try a ham omelet with a little cheese or scrambled eggs with chopped tomatoes. Try a prepare-ahead breakfast casserole for a hearty family breakfast.

Don't Forget the Oatmeal - Making your own oatmeal is much healthier than the instant packets. Cook up according to  instructions and add a little fruit or honey.

Healthy Breakfast Bar - Make up a batch of healthy breakfast bars the day before and use them for a quick, on-the-go breakfast. Use a low-sugar recipe and include lots of healthy dried fruits.

Fantastic Fruit Salad - Serve a chopped fruit salad with a yogurt dip. Mini muffins are delicious dipped in yogurt too.

Breakfast Burrito - Scramble some eggs and place them in a tortilla with chopped tomatoes, a little grated cheese, ham or other favorite toppings… roll up and enjoy a yummy breakfast burrito.

Spruce up your Toast - Try whole wheat bread and serve with peanut butter and sliced bananas, cream cheese and raisins (sprinkle a little cinnamon on top), or cream cheese and a fruit jam (pure, no-sugar added jam is best).

Pizza for Breakfast - Split a couple of English muffins in half, top with a little pizza sauce, grated cheese and some chopped ham or even eggs. Place under the grill for a few minutes and you have a nutritious breakfast pizza. You can make bagel pizzas too.

Those are just a few healthy breakfast ideas to help keep things interesting. And don’t forget parents need breakfast too… we’re usually so busy looking after the kids, we end up skipping breakfast ourselves. Here’s a trick we use quite often in our house.

Take a selection of dried fruits, nuts, and seeds (sunflower, pumpkin, etc.) and mix together in a bowl. Then place a handful or two of the mix into individual plastic bags.

So even on the busiest of mornings you just grab a bag on the way out. This makes a great on-the-go healthy breakfast idea.
